It’s not often that we see restaurateurs participating in pop-ups at other restaurants. But in the case of Kaydara, a Pan-Asian noodle bar that closed its only location at 777 Main Street, this makes perfect sense. On Sunday, January 20, Kaydara will be popping up at Salumeria Belsito on Hertel Avenue. On that day, fans of Kaydara who miss their fix of pot stickers, dumplings, fresh rolls, and noodles, will have a chance to order them on a limited menu, served along with paired wine and drinks.
This is not the first time that Kaydara has popped up at another establishment, since closing. Back in October, the noodle bar took over the kitchen at 42 North, and Buffalo Proper before that (among others). Apparently this type of restaurant pop-up concept is working well for Kaydara and its hosts. By popping up in various locations, it keeps the Kaydara dream alive, while bringing in new customers to restaurants that might be looking to have some fun. Or maybe, in this case, loyal Belsito customers who love their typically Italian fare, are happy to try something new and different?
It’s neat to see these sorts of relationships between culinary enterprises succeed in Buffalo. Who knows – by keeping the Kaydara name current, via tangible ties with various restaurants, Kaydara will continue to strengthen its customer base. Maybe after running enough pop-ups, the perfect available space might pop up for Kaydara to occupy. Now that would be something.
