Coinciding with its soft opening on Niagara Street, Ru’s Pierogi has made it into the big leagues in another manner entirely. The relatively young Buffalo-based company has been awarded with a contract to serve its pierogi at the KeyBank Center during Buffalo Sabres games. Fans, typically encountering hotdogs and soft pretzels, will now be able to place an order for pierogi, which is considered a specialty item at the arena. Delaware North tapped Ru’s as a culinary teammate, announcing that they had garnered a coveted spot within the arena’s food concession sales.
Ru’s beat out four other contenders that were vying for the specialty food contract. Moving forward, Ru’s Cheddar Potato Pierogi will be served at concession stands in the 100 and 300 levels. The pierogi will be sold as part of a Broadway Polish Plate ($12), which will include smoked kielbasa and braised cabbage. Ru’s will also be serving up its Apple Pierogi inside The Lexus Club ($9).
According to Stephen Forman, Delaware North’s Executive Chef, Ru’s Pierogi was chosen for its “superior texture and flavor profile.” Along with being readily edible (considered a finger food), the dish adds a WNY flavor profile to the menu.
“We’ve known for a while that food trends are pointing to people wanting fresh ingredients and innovative flavor combinations,” said Andy Ruszczyk, Chef at Ru’s Pierogi. “Ru’s has been doing that all along, and partnering with Delaware North, a company that shares our vision, is a natural next step. I’m so excited to bring my interpretation of modern fillings combined with my grandmother’s traditional dough recipe to Sabres fans all season long.”
“It was important to us to capture as many local flavors, sourced from as many Buffalo-based providers, as possible, plus keep in mind the portability of each item,” he said. “Some people look forward to the traditional hot dog or nachos when watching the Sabres play, and that’s fine,” he said. “But as a foodie myself, I can’t wait to try all of Delaware North’s new offerings.”
