The English muffin is toasted, with a little crunch. Just right. Lightly smothered with a full bodied pesto and two slices of tomato to balance the fats from the cheese over eggs. It is delicate, juicy and has the perfect bite. For those that can appreciated an aromatic, flavor forward, bacon version, there are high points here too. Both options – with or without bacon are available. You can tell a good chef by how well he or she cooks the eggs. And the breakfast crew at the Lexington Co-op is scoring high.
The eggs by the way, are poured and cooked in a cylinder which gives it thickness and height. Snappy thinking on the chef’s part, as it allows the breakfast sandwich to stand taller – steady – perfectly fitting in one hand so you can hit that “next page” button on your cell phone, or attempt to pull out of the Lexington Co-op’s drive…
Before you pull out, right next to the counter with the breakfast sandwiches is a cooler with teas, lemonade, coffee and beer … I mean, other alternative morning drinks.
Truth be told, I held out on this article because I stop in three times a week to grab one on the go. And I realized the hard way that if I tell you all… there might not be one for me tomorrow. However, I am quicker this time around and gave the Lexington Co-op a heads up.
But if there is only one Calaprese left – and its between you and me – just remember…I am a Ninja in Stilettos.
