What would the world of food trucks be without dessert trucks? After chowing down on edible delights inspired by cuisines from all over the world, a yummy dessert is the perfect way to wrap up a food truck experience.
While there may be a few food trucks dedicated to sweets in Buffalo, there is only one cheesecake truck. Cheesecake Guy food truck owner and operator, Matthew Schelter, recently rolled out his delicious offerings in Buffalo. Schelter stated that he moved forward with the idea for cheesecake on wheels after being handed down the recipe for his family’s coveted cheesecake recipe. “I can’t thank my parents enough for giving me the opportunity to start our family business with the Schelter family recipe,” stated Schelter.
In addition to attending food truck rodeos and regional events, Schelter also intends on wheeling and dealing his prized desserts at Bills games. Aside from the edibles, Schelter is jazzed about the way his truck’s graphics turned out – created by freelance graffiti artist Ryan Smith. “I wanted a different approach which fit my personality, rather than a standard paint job or wrap I thought a graffiti design would bring a unique look and feel to the truck and business as a whole; and Ryan was able to provide that and more.”
As for the cheesecake offerings, Schelter’s staple selections include:
- Raspberry Beret – creamy cheesecake swirled with homemade raspberry sauce and topped with fresh raspberries
- Ninja Turtle – creamy cheesecake swirled with rich chocolate and caramel baked to perfection, finished off with a drizzle of caramel and chocolate sauces sprinkled with just the right amount of crushed pecans
- Special occasion flavors such as Maple Bacon
Cheesecake Guy is already out on the road, searching for the perfect spots to entice Buffalonians. Schelter stated that now that the weather is nice and warm, cheesecake sales are brisk. Thankfully there are plenty of bike rides and yoga events this summer to offset the decadent desserts that Schelter is unleashing upon the public.
