Nickel City Chef XXII: Boye v Bryant in Battle: Lardo and Pancetta

If you love watching the myriad national culinary competitions on TV these days, then you should be aware that Buffalo has got some of its own amazing cooking challenges. The problem with the nationals shows, is that you can’t just walk out of your door and seek out the different chefs that are cooking in the battles and challenges. Yes, it’s still fun to watch, but when you tune into the local programming, you get to know the local chef talents in the area. These are the same talents that are cooking right here in the community, whether it’s on a food truck or a local restaurant. It’s also fun to see what sort of local products are being used, and where they are sourcing them from.
Check out the video below to witness the the 22nd episode of Nickel City Chef which took place on March 10, 2013 at Artisan Kitchens & Baths in Black Rock.
“Challenging Chef Teddy Bryant a sous chef (and Nickel City Firing Line winner) for Lloyd Taco Trucks take on Nickel City Chef Jennifer Boye of Mansion on Delaware Avenue in a culinary battle featuring two types of cured meat from COPPA Meats (Facebook) –pancetta and lardo. Judges for the day included Regina Schrambling, prolific food writer and former deputy dining editor for the New York Times, chef and COPPA owner Bruce Wieszala, and Chef Christopher Daigler of Encore who was a winner in 2012. As always, our show was hosted by Bert Gambini and Chef Mike Andrzejewski.” – Nickel City Chef
