Even better, these recipes are offered to us by area chefs, who are passionate about using fresh, locally sourced ingredients. In co-operation with our partner, Slow Food Buffalo, this month we're pleased to present you with a zesty recipe from Chef Chris Silverstein, owner of Lagniappes, located in Buffalo's own Allentown.

Tomorrow is Fat Tuesday, a chance to party and indulge before the beginning of Lent. Collectively, Allentown really does this event right. All of the bars and restaurants participate; games and contests are held, and the street comes to life (despite the chilly weather) with a full-fledged Mardi Gras parade.

Located in the heart of Allentown, across from the Old Pink and steps away from Nietzsche's, Lagniappes is going all out. This Cajun restaurant offers up killer New Orleans style food year round from its cozy little kitchen, but for Fat Tuesday they're going over the top by cooking up a Louisiana favorite--alligator! Small Restaurant, Big Flavor

One of Allentown's newest restaurants, Lagniappes (pronounced lan-yaps), may be tiny, but the flavors of its predominately New Orleans-inspired menu are big, bold and...well, beautiful. Lagniappes: A Little Something Extra

The Silverstein cousin duo at Lagniappes (pronounced: lān-yāps) has brought a new noshing concept to Buffalo-- upscale take away. At Lagniappes, guests will find delicious high-quality food served in take-out containers. Co-owner Chris Silverstein explains, “I want the food to look as good in the box as it does on the plate.” Everything is made “to go”, but folks are welcome to stay. And in a couple more weeks the high-end, environmentally friendly, microwave safe take-out containers should be in. Chris has worked in many fine dining Buffalo restaurants over the years but his dream was always to go to New Orleans and submerge himself in her rich cuisine. To make it happen he gave up his apartment and moved home for a year to save. He finally got to Louisiana, where he spent 5 wonderful and absurdly hot years training in The Big Easy.
