BR Chef's Challenge: White Cow's Yogurt w/Bacchus

Story Options

Roasted beets, pickled red onion, orange segments and arugula; lightly dressed with White Cow's yogurt, infused with basil and orange zest. Fresh, bright and simple. Everything one looks for in a salad, and an elegant approach to the use of the “mystery ingredient”. With this dish, Chef Brian Mietus of Bacchus takes the second Honorable Mention Award in Buffalo Rising's Chef's Challenge: White Cow Dairy's Yogurt.

Chef Mietus' culinary philosophy focuses on using the freshest seasonal ingredients available. He enjoys pairing French techniques with American ingredients--something he learned during his time at the New England Culinary Academy. He further honed his skills during the subsequent decade, as he traveled the U.S., cooking in resort towns in Utah, Colorado and Nantucket. He also credits much of his influence to the cuisine of Northern Californian chefs and restaurateurs like Wolfgang Puck.

And Bacchus' menu reflects this. One of its most popular dishes is the Asparagus Roll, an item found on the Small Plates portion of the menu. Made with asparagus, prosciutto, goat cheese and whole grain mustard vinaigrette, it sings spring. Another favorite take on an American classic, is the Steak and Eggs. On this small plate, beef carpaccio is served with egg crostini, shaved reggiano and white truffle oil. Again, fresh and simple.

Bacchus runs a tight ship with a clean, focused menu and an award-winning wine list. Summer movies, which can be seen on the back patio every Wednesday (through September 5th), are what I consider to be one of Buffalo's best summertime events, replete with table service and white linens. In October, their Wednesday Wine School begins again, where a modest fee will afford you a mini wine education with Sommelier Michael DePue.

Thank you Bacchus and Chef Mietus for your participation in BR's Chef's Challenge: White Cow Yogurt. Tune in Friday to see which restaurant takes Third Place.

Might be the best restaurant in town, at the very least in the top 3.
