Good, Stinky Cheese: Black Mountain Cheese


This cheese, purchased at the Lexington Co-op, shines as a stand-alone snack or appetizer with some hearty bread or crackers. Semi-soft white cheeses also pair well with amber and brown ales- try it with a glass of Newcastle Brown Ale for a hearty snack.
Because of the interesting flavor profile of the cheese, cooking options are pretty limited. It would make a great addition to a grilled cheese sandwich, blended with another cheddar. It can also be shredded and used as a topping with certain dishes (soup, for example).
The Lexington Co-op has a great selection of organic cheeses, including Red Dragon which is also produced by Abergavenny, the maker of Black Mountain. The mustard seeds and ale blended in Red Dragon give it a kick befitting the name, and while Black Mountain is just as assertive, it has a completely different flavor profile. Get a pound of each ($11.99) and you'll be covered for all snacking occasions.
Despite the unusual flavors, Black Mountain and Red Dragon should both appeal to most people, whether or not you dine on fine cheeses regularly. They passed the early-morning BRO office taste test- everyone who tried them liked them.
