It didn't take long for ETS to transition from one location to another. And according to co-owner Jackie Lucchino, there were no glitches on opening day (yesterday). "Everything went very smoothly," she told me. "All of the equipment worked from the start... that was a nice surprise." I toured the operation a week ago with Jackie's brother and co-owner Mike Lucchino who pointed out all of the state-of-the-art equipment that had been installed. These guys have really gone all out when it comes to keeping the food fresh. There are numerous walk-in refrigerator and freezer units… one of the models can take food at room temperature and zap it to freezing within seconds.

The interior of ETS has been custom built to the exact specs of a family that has been in the business for a long time. Every minute aspect of the interior has been thought out... even down to the winding rail-guides that keep counter lines from drifting out the door. Those same customers can gaze up at the vertical media screen that features Pepsi products being poured and melted cheese being drizzled onto beds of nachos. If that makes people too hungry then there's always the flat-screen (playing music videos) to watch. Plus, the lighting is brilliant - especially when you consider that this is a taco and sub joint. From color changing LEDs in the ceiling and under the cash wrap to the modern pendants and backlit menu boards.

Thankfully they kept the bar-style eating area in front for customers to watch the action on Elmwood. The new ETS location offers customers the ability to pick up an order at the drive-thru, or eventually there will be an outdoor seating area located on a patio next to the parking lot. This should all add up to make for a lively block on the Elmwood Strip this summer.
