When I stopped in to Tabree (see original post) a couple days ago I found co-owner Bryan Bryndle sitting at the bar going over some recipes and old photos of the space. The interior had totally been reworked and the new layout really did spell out ‘French Bistro’. A day earlier I had bumped into co-owner Tara Tara Dejoseph who was preparing the back patio for the opening. When I asked Bryan when they would be open for business, he answered, “We’re still waiting for The City to issue our permits.”
In the meantime the last minute detail work continues and the heavy lifting has turned into fine-tuning. The bar area and the dining area are both ready to go and a chef has been hired to run the kitchen. “We’re introducing chef Kristina Daley,” Bryan told me. “One of the dishes that she’s going to rock is the Seafood Plateau. It’s a two-tiered platter over crushed ice, decorated with fresh seaweed featuring oysters and clams on a half shell, along with lobster, shrimp and crab cocktail with several dipping sauces. The platter will be served with twice-cooked Yukon Gold frites. All French wines will be served by the glass, and we’ll have new world wines by the bottle.”
The atmosphere at Tabree will be as chill as the crushed ice in the Seafood Plateau. Once the retractable black bistro awning goes up and the permits are secured, fine food and funky music will combine to make for a memorable dining experience. “The music is going to be French club music,” Bryan told me. “Along the lines of down tempo house music.” It was then that Tara came from the kitchen and said, “It’s going to be lounge music.” If you've been looking for a quaint little bistro with cool music and friendly owners, Tabree just may be the place for you.
