When Zilly Rosen, owner of Zillycakes, first let the cat out of the bag that she was looking for a buyer for her business, there's no way that she could have anticipated what would happen next. With no buyers at hand, Wendy Egloff, owner of Firefly Cupcakes (based in East Aurora) flew in and snapped up the space. Wendy is planning on remodeling the former cakery into a sit-down cupcakery, complete with two in-house dining areas and will be serving up Stumptown Coffee to boot. 

In a sugary twist, Firefly will retain Zilly's cake-making services via a special residence within the shop. Meaning that both Wendy and Zilly will be able to offer up the best of both worlds under the Firefly brand, from couture cupcakes to fanciful wedding cakes. Fans of Firefly Cupcakes will now be able to take cake-making classes, sit down and relax with a cup of coffee, order a custom cake, and/or pick up weekly-themed outrageous cupcake selections. According to Zilly and Wendy, this is just what the doctor ordered...

I hope that that firefly cupcakes will carry a vegan cupcake option. Zilly was great at that! Not only did she carry a regular option for vegans (and celiacs too), but she made the alternative diet options just as interesting as the other options. Sounds like Zilly will work with the new owner. I'm glad to hear that!

BuffaloByChoice: I had the same question, and Zilly assures me that Firefly will also have both vegan and gluten free cupcakes. If you go to the Firefly website, you will see that they already do create vegan cupcakes.

So how does one make up for the protein, calcium and vitamin deficiencies? I don't pay much of any attention to it but it sounds like some kind of cult following.

educate yourself, you don't need animal product to get your nutrients. Great documentary is "vegucated". You can find it on netflix.

Vegan cupcakes are actually delicious. Major cities usually have multiple vegan bakeries and cupcakeries. It is amazing what one can do with some ground flax seeds and coconut milk....this non vegan says yum!

As jones7986 said, those things are obtainable from other sources besides animal products.

Then again, one usually does not eat a cupcake for the nutritional value . . .

A well-rounded vegan diet contains an abundance of nutrients. The only vitamin we must supplement is B12, since it is found in the soil and washed away by time the produce makes it to our table.

I have been vegetarian/vegan for a long time and I look younger than my years and I am not popping pills for health problems like so many others.

To answer your questions, vegans eat nuts, beans, whole grains and soy foods to get their fill of protein. Calcium comes from soy or almond milk, kale and broccoli instead of milk. Most vegans start their day off with a multi-vitamin or a similar supplement, because as was mentioned, there are a few nutrients in short supply with a vegan diet.

Veganism is not a cult. Veganism is a diet similar to vegetarianism, just minus the dairy and eggs. It's usually driven by love of animals, desire to eat healthy, respect for the environment, or something similar. About 1% of Americans are vegan and 3 - 4% are vegetarian.

As to vegan cupcakes, I'm not the master of making them...which is why I turn to Zilly. I can tell you I make pancakes without eggs and milk by substituting baking powder and soy milk. I've gotten good reviews from most non-vegans that try them.
