The Eights Bistro has officially opened for lunch. After serving up dinner dishes for close to a year, the bistro has finally done what it originally set out to do - offer lunch fare to the Medical Campus and the downtown business crowd. Many of the dinnertime favorites have carried over to the daytime menu, including the vegan Philly cheesesteak, the vegan beef on weck, African lentil dip, and the caramelized onion, mushroom, blue cheese and spiced nuts pizza, to name a few. While I was tempted to get one of my standbys, I opted to try one of the newest pizza offerings - the tomato, eggplant, hot smoked onions, and fontinella. My dad opted for another new creation - the roast beef, fried egg and cheddar sandwich. Our two friends went with the soppressata, capicola and sharp provolone sandwich and the tomato, mozzarella and basil pizza.

To start, I must say that my dad chose the winning combo (and I don't even eat meat). The roast beef and egg looked spectacular, and according to my dad it was one of the best sandwiches that he had ever had. I'm a big fan of putting a fried egg on top of just about anything. I was a bit hesitant about the breaded eggplant on my pizza, because I usually avoid eggplant at all cost. The breading helped to create little round (and super flat) patties that were easy to eat and added needed consistency to the hot smoked onions. I must admit that I felt a bit suspect while sitting at The Eights for lunch, as I am more accustomed to partaking in the nighttime jovialities - speaking of which, The Eights recently scored a liquor license and has added a series of muddled drinks to its roster (Watermelon Cooler: watermelon, Kettle One, St. Germain and basil | Bad Ass Mojito: 151, apple juice, red raspberries | Ferran Mojito: Plymouth Gin, grapefruit juice, basil and lime). 

One last addition to The Eights is the hanging of artwork on the walls. The current instillation is curated by Vanover Fine Arts. To that end, the decor enhancements, a few of the latest seasonal offerings and the muddled drinks have been inspired by Martin Danilowicz who has recently joined the team at The Eights, working alongside Co-owner and creator Amelia Nussbaumer.

*One of the partners at The Eights is my wife, and since the bistro opened I have tried my hardest to be as unbiased as possible, much to my wife's chagrin.

Maybe I am missing something but the menu lists tuna and beef on weck under Vegan Sandwiches. Are they using a vegetable cow for this menu item?

They are meatless... and, coming from a meat eater, delicious.

I will definitely check out this restaurant whenever I come back to Buffalo for a visit!

I was saddened to hear that the brussels sprout pizza disappeared off the menu. That thing was amazing.

She will be bringing back the Brussels sprout pizza in a few short weeks, just as soon as she can source the sprouts locally - they are not in season right now and the only option is frozen, which she refuses to serve. The vegan Merguez sausage will be reappearing as well.

I had a bad experience the first time there as well. That roast beef sandwich looks amazing though. Will definitly give it another shot.

I just ate there with some friends and the place has changed quite a bit. The vegan sandwiches are awesome, as a meat eater I never would have known it wasn't meat. Also best pizza in the city very original, I love the fig jam. It's also nice to see bartenders making real cocktails, they are works of art and the most original I have seen. I watched the bartender squeeze fresh juice into each drink. Amelia has set the bar high. Whatever has gotten into you Amelia keep it there. HAPPY HOUR.

Used to go to the Moosewood about 26 times per year (not that they're the end all be all, but still) so tried the 8's after all these great recommendations... eh, so-so. I get a veg place trying to push alcohol to boost profits but it's so incongruous to a good vegetarian philosophy. And I won't get into details but I was there with four others for lunch and none of us left thinking "hey, can't wait to go back." Seems like they're trying to make a quick buck on the lunch crowds from east of Main.
