It seems the crown prince of Buffalo's restaurant royalty, Chef Mike Andrzejewski, is planning to expand his
Seabar location on Ellicott Street to include a lounge and a larger kitchen, as reported yesterday by
The Buffalo News. For those of you who don't know, Andrzejewski was a partner/chef at Tsunami, a restaurant that had a major impact on the Buffalo dining scene a number of years ago. That, coupled with his years in the business and his brave trek into the modern, edgy cuisine of SeaBar make him one of Buffalo's most respected and talented chefs. Andrzejewski said sayonara to his suburban location last week, so he will have more time to really focus on reinventing the downtown hot spot.
I've had the pleasure of working with Chef on
Nickel City Chef, and I know he is looking forward to offering a larger variety of items on his menu. While he is a fantastic sushi chef and SeaBar's sushi is some of the best, I can see how a classically trained chef would start to get the itch to cook again after a while. Let's wish him luck and keep him busy. I don't know about you, but I am looking forward to reaping the benefits of his ability and skill behind the stove again.

This is great news!!! I am a fan of the Downtown location and know how busy it can get. A Bar lounge addition would be perfect and I know it will work. I've been to Sushi bars in NYC that are also a lounge club to fit into the night crowds but also keep it simple for the lunch crowds. Go Seabar!
